At the end of the trip, here's our final cumulative ride map. 
When appending gpx files together, Strava doesn't do a good job of joining segments. So the two mid tour train rides we took actually appear as long straight segments and are included in this route but shouldn't be.

Some notes on our route:

  1. After plane travel, we ended up with only 12 biking days for our route. We obviously couldn't do the entire EV15 (but we'd love to come back and complete it some day).
  2. With the limited number of days on the route we still wanted to see the famous Middle Rhine section with all the castles between Mainz and Koblenz. So we got advice from a number of folks who'd done the entire trail on which sections people might prefer to skip between Oberalpass and Mainz and ultimately we opted to take train rides from Basel to Strasbourg and between Karlsruhe and Mainz. 
  3. The actual EV15 follows a route along the southern part of Lake Constance, but based on some recommendations from the guide book we used (from Mike Wells - below). We decided take a Northern route from Lindau to Meersburg (then a ferry to Konstanz) . That was a really beautiful ride and we're glad we decided to take that alternate route.
