Mauriac
A lovely ride on very quiet roads through the Auvergne highlands. The countryside has a Swiss feeling, especially due to the many herds of bell-graced cattle. After a bit of a climb out of Besse, we gradually lost altitude again as we traveled southward.
Mauriac, the largest town we’ve seen thus far, has some attractive architecture (a college and its 11th century cathedral, sadly marred by the religious wars of the 1600’s - all of the figures of its tympanum were beheaded) but is otherwise a nondescript industrial town. We did find a very nice room though, and what Rachael described as one of the finest meals of her life: a kir apertif; blue cheese and walnut salad; blended cheese and potatoes; trout fried in lard; and a wonderful sorbet with three flavors and a black current sauce.
