Cooking class

AToday was all about the cooking class.  It was about a 22km ride to the location for the cooking class and 20km back.  The class took place Tenuta Donnana a family home but also and accommodation location with rooms and some glamping facilities.   The home is for the family of the man who owns the cycle company.  We were instructed by the family cook plus nonna and her daughter did the translation.  We started with Pitta di Patate, then orecchiette followed by dessert.  We got to eat it all plus more and of course wine.  No dinner tonight.

The cook making the potato layer for the appetizer. It was a layer of massed potatoes, a filling of well cooked onions, capers, olives and tuna and then another layer of potatoes. I was cooked for 30 min at 170C until golden brown.

Nonna kneading the dough for the orecchiette. The dough is a wheat flour (low in gluten), salt and water. They grow the this special wheat themselves.

Tim took a turn at kneading the dough and nonna said he was the best they have had in 10 years, what a compliment.

You roll the small piece out and the turn it inside out with your thumb.

The dessert filling was ricotta cheese, crumbled dark chocolate and Cointreau.

Our orecchiette in a tomato sauce and parmesan, no meat and no garlic. We learned that in this part of Italy they don’t us garlic.

They prepared zucchini and eggplant for us along with along with a lettuce salad.
