This is a great topic. Youtube is my best friend as I pedal on the trainer over the winter to try to keep some semblance of cycling fitness before nordic skiing starts.
I pretty well watch any touring videos I can find. One I have been folowing for a while is Mike Hedbergh on his channel Bike Touring Mike. He lives in Sweden and takes short tours in various parts of Europe. He just seems to have a pleasant way that makes the videos enjoyable. His latest series was in Italy where some of the scenery is beautiful.
Though all in Portuguese, O Ciclista Improvavel has some great scenery along several routes in Portugal including the N2. The creator does video work as a career so the quality is quite good.
Yep, Mike's pretty good. Ryan Van Duzer is really great too
I'm more into the videos than the journals these days (is that a sin?)
