You are right - parts of Merida (centro in particular) are chaotic and loud, and sometimes its hard to see beyond that when your senses are under assault. But in general we love the city for many reasons and we are willing to put up with the not so pleasant (we see it but don't focus on it) in order to experience the good. Kind of like bluecheese. It stinks but I love the taste.

The one on the right looks so good I had to google "pan imposibile". I found this "Mexican Chocoflan Impossible Cake is a dense, rich chocolate cake stacked with creamy vanilla flan, dripping with a delicate layer of cajeta caramel sauce" and one of these days I'm going to give it a try!

Apparently it's impossible because with the layers one way and then comes out with the layers different.
