Not the best plan, Andrea. Look around at all Bruce’s stuff you’ve got already! Where would you put anything new?

I was talking to Andrea about it recently , Bruce. The simplicity of the ingredients and the cooking process itself keep stunning me. And yet I find it extremely difficult to reproduce when in the kitchen myself. And I have got the full equipment at home. I would even want to believe the ingredients are almost identical. Why is that?

6 years agoAnd those flavors can’t be reproduced here even in the best, most authentic Thai restaurants (of which we have at least 4 out of the 100 Thai restaurants in Portland) because the ingredients in Thailand are so fresh. It’s exactly as you say, if the little eatery can’t please the locals then they are finished, so we look to see who else is eating there. We’ve had such outstanding food at these little “grandma” stands.
6 years agoYou are very right, Chris, and I am afraid I may come across like I am the only one who knows how to travel in Thailand. This is of course not the case and I fully understand people who have only got two or three weeks of annual leave and love the combination of decent beaches, entertainment and food that does not necessarily disassemble tongue and stomach. I am only trying to say if you make the effort to bring and ride your bike down (or up in your case) here, take advantage of it. Thailand is much, much better than Phuket. Which Coleen and you know anyway....
6 years agoOn my last two trips to Phuket, I landed at the airport and headed north. But the beaches are great for first timers from Sweden on a first Asia trip, I guess.
6 years agoYou know what is like here, Andrea. This is not just the matter of how much but how good. These places are catering for the locals and f you are not god you might as well close down. And an almost ridiculous bill comes with t. Phuket prices are higher for the locals too, all the same this meal cost me 60 Baht (1.60 € / 1.80 USD). Certainly adds to the pleasure!
